You have kids. They are probably running around, occasionally screaming their request for cookies. Why not make some quick and easy cookies to get them engaged in some baking with you? The rewards will totally be worth it. I dug out my all time favourite recipe - Three Ingredient Peanut Butter Cookies. I make these all the time. So to get started, head to your Bulk Barn and grab these ingredients:
- 1 cup peanut butter
- 2 cups white sugar
- 1 egg
See! Just three ingredients. These cookies have turned out every time I have made them, and I have subbed out peanut butter for Peanut Free Butter, Almond Butter, etc. You can also sub out the egg for bananas if there is an egg allergy.
1. First, preheat your oven to 350 degrees Fahrenheit. Then line your baking sheet with parchment paper. I use a non-stick silicone baking mats rather than parchment paper or non-stick spray.
2. Then mix together your peanut butter, white sugar and egg. Mix in a bowl until it is all creamy and smooth.
3. Use a spoon, and drop spoonfuls of the dough onto your parchment paper and baking sheet. Make sure they are an inch or two apart in all directions - they do flatten and spread a bit. You can use a fork to flatten the cookies with a criss-cross shape.
4. Then bake the cookies for 6 to 8 minutes. Take them out and let them cool, then eat and enjoy! I use a cooling rack and they are edible within minutes.
They come out soft - the best kind of cookies!
